Recipe: Yam Sandwich


This sandwich is fresh, simple, colorful, and full of gut-loving fiber. Your 3 trillion microbes will love you for it!


Ingredients:

1 small yam or sweet potato, peeled and cut into ¼ inch slices

8 slices of sandwich bread (for gluten-free, I really like Anna’s bread)

8 red onion slices

1 avocado, pitted and sliced

8 tomato slices

Alfalfa sprouts, broccoli sprouts, or pea shoots to taste

½ cup hummus (or as much as your heart desires)

4 oz goat cheese, plain or herbed


Directions:

  1. Boil the yam or sweet potato slices in sea-salted water until tender, about 10-12 minutes. Drain, rinse with water, and allow the yam or sweet potato slices to cool.

  2. While the yam or sweet potato cooks, slice onions, tomatoes and avocado; toast bread if desired.

  3. Spread hummus on bread, and layer with goat cheese, yam or sweet potato slices, onion, avocado, tomatoes, and sprouts or pea shoots.

  4. Serve with your favorite side of veggies.
