Gluten-Free Sloppy Joes

No matter the weather outside, I do love a good Sloppy Joe. We did a summertime spin with a side of slaw and roasted sweet potatoes. However, you could make it heartier by serving it over a baked potato and roasted Brussel sprouts. Any way you choose, it will be delicious!

Ingredients:

  • 1 lb grass-fed ground beef, bison, or turkey

  • 2 garlic cloves, minced

  • ½ large red onion, diced

  • ½ green bell pepper, diced

  • ½ red bell pepper, diced

  • 2 tbsp raw apple cider vinegar

  • ¼ tsp cayenne

  • 2 tbsp dried oregano

  • ½ tsp black pepper

  • ½ tsp sea salt

  • ¼ tsp ground cloves

  • 8-oz can tomato paste

  • 15-oz can diced fire roasted tomatoes

  • Optional: Bubbies pickles, gluten-free bun

Directions:

  1. In a large skillet, brown meat until done. Drain grease if needed.

  2. Add onion, bell peppers, and garlic, sautéing until soft and onions translucent.

  3. Add remaining ingredients and simmer for 10-15 minutes

  4. Serve on a gluten-free bun and/or topped with Bubbies pickles.

Serves 4
