Gluten-Free Bison Meatballs
Fact: Meatballs are delicious. That is 100% not a fact; I simply felt the urge to channel Dwight Schrute from The Office. Back to meatballs… I really like them and rarely enjoy them at a restaurant since most contain gluten. Alas, this recipe is simple, contains no gluten, and I find it quite tasty. I hope you do too.

Ingredients:
2 tsp dried oregano
1 tbsp dried basil
2 tsp dried thyme
½ tsp sea salt
½ red onion, diced
3-4 garlic cloves, minced
1 6-oz can tomato paste
½ cup cooked quinoa
1 lb ground grass-fed bison (or any ground meat of choice)
Directions:
Pre-heat oven to 350°.
In a large mixing bowl, add the first 8 ingredients and mix well. Then, add the ground bison and mix with your hands until all ingredients are combined.
Using your hands, form 12 balls with the mixture and place on a baking sheet (balls will be about 2 inches in diameter). Wash hands thoroughly, place baking sheet in the oven, and cook for 20 minutes or until done.
Serve with your favorite vegetable sides and enjoy!
Servings: 4 (1 serving = 3 meatballs)
